- 1½ lb mahi mahi fillets
- salt and pepper, to taste
- 1 cup macadamia nuts, coarsely chopped
- 1 cup unsweetened coconut milk
- 1 lime, cut into wedges
- Jasmine rice, as below
- Preheat oven to 350°F.
- Rinse mahi mahi and pat dry. Cut fish diagonally into four 1" wide
pieces and place in a single layer in a baking dish. Season with salt
and pepper. Sprinkle ½ cup of the macadamia nuts on fillets.
Pour the coconut milk around the fillets.
- Bake 18 minutes or until opaque.
- Place a spoonful of rice on each plate. Top with a piece of mahi-mahi;
sprinkle the remaining nuts over the fillets, spooning coconut milk
over the top. Serve with a wedge of lime.
- For Jasmine rice : 1¾ cups water, 1¼ cups
jasmine rice, ½ tspn salt . Combine water, rice, and salt in
large saucepan. Bring to boil over high heat. Reduce heat to low, cover
and cook until rice is tender, about 15 minutes. Remove from heat. Let
stand covered 5 minutes. Fluff with rice with a fork before serving.
